Oat-topped tomatoes
Serves: 2

2 (650g) large beef tomatoes, halved
2tsp wholegrain mustard
4tbsp (80g) low-fat cream cheese
50g jumbo porridge oats
Dash of Worcestershire sauce
2 wholemeal muffins, toasted
METHOD1. Preheat the oven to 200°C (gas mark 6). Place the tomatoes cut side up on a small baking tray and spread with mustard.
2. Spoon over the cream cheese and top with the oats. Sprinkle with Worcestershire sauce and bake for 15 mins. Serve on toasted wholemeal muffins.
TIP
Try using cream cheese with garlic and herbs for extra flavour.
