Tuesday's healthy recipe

Chana Dahl
Ingredients (serves 6)
· 400g chick peas, drained
· 2 medium onions, chopped
· 2 cloves garlic, crushed
· 1 tbsp olive oil
· 1 tsp cumin seeds
· 20g fresh ginger
· 2 tsp turmeric
· 4 green chillies
· 200g small tinned tomatoes
Method
· Fry the onions and garlic in a pan until golden brown
· Add cumin seeds and ginger and cook for 1 minute
· Add turmeric and chillies and cook for a further minute
· Add the chopped tomatoes and simmer for 5 minutes
· Add 1 litre of water, bring to the boil and add the chick peas
· Simmer for 30 minutes
· Garnish with coriander
(tip – wash hands thoroughly after chopping the chillies)
