Thursday's healthy recipe

Ingredients
(serves 4)
· 3 tins chickpeas, drained
· 6 spring onions, chopped
· 1 teaspoon dried chilli
· 1-teaspoon cumin
· 1 clove garlic, crushed
· ¼ lemon squeezed
· 4 tablespoons fresh coriander, chopped
· 150g low fat plain yoghurt
· Bag of salad leaves
· 2 tablespoons sunflower oil
Method
· Mash the chickpeas and the spring onions (not completely smooth)
· Add the chilli, cumin, garlic, lemon juice and half the coriander
· Add the plain low fat yoghurt and mash them all together
· Divide the mixture into 8 and form them into burgers
· Brush the burgers with oil and grill for 5-6 minutes on either side
· Stir the rest of the coriander into the yoghurt and use as a sauce to spoon over the cooked burgers
