Friday's healthy recipe

Ingredients

(serves 4)

· 4 wholemeal pitas
· 2 chicken breasts cut into chunks
· 1 tsp grated fresh ginger
· 1 tsp chopped garlic
· 1 tsp chilli powder
· ¼ tsp turmeric
· ¼ pint of low fat natural yoghurt
· 4 tbsp of lemon juice
· 1 tbsp chopped fresh coriander
· 1 tbsp olive oil
· 1 small onion
· chopped tomatoes
· shredded lettuce

Method

· Cut into the middle of the pitas and set aside
· In a medium bowl mix together the chicken pieces, ginger, chilli powder, yoghurt, lemon juice and chopped coriander and leave to marinade for at least an hour
· Place in a flameproof dish and baste with the oil
· Preheat the grill to medium and grill the chicken for 15-20 minutes until cooked turning and basting at least 2 or 3 times
· Place the chicken and the vegetables in the pitta pockets
