Saturday's healthy recipe

Ingredients
(serves 4)
· 170g/6oz-dried noodles
· 1-teaspoon soy sauce
· 1-teaspoon oil
· 110g/4oz mange touts
· 55g/2oz carrots, sliced thinly
· Half a red pepper sliced
· 55g/2oz sweet corn
· 1 clove garlic crushed
· ½ tablespoon grated fresh ginger
· 55g/2oz bean sprouts
· Few drops chilli sauce
· 2 tablespoons stock or water
Method
· Cook the noodles according to the instructions on the packet
· Drain toss with the soy sauce then set aside
· Heat the oil in a wok or frying pan add the mange tout, carrots, pepper, sweet corn, garlic and the ginger fry for around 2 minutes
· Add the bean sprouts, chilli sauce and stock stir for another 2 minutes
· Add the noodles to warm through then serve
