TOP chef Paul Heathcote MBE will run a rooftop dining restaurant at the new £30 million Hotel Future in Oldham.
The 120-bedroom town-centre hotel is a world first as it will also double up as a full-time vocational training centre.
Paul, from Bolton, who is famed for his British cuisine, will also run a cocktail bar alongside the rooftop restaurant.
The plans also include a casual dining brasserie and a branded health club and fitness centre.
Industry leaders Hilton, Marriott and Malmaision, among others, are backing the project financially and have committed to train their staff at the hotel.
Oldham council is aiming for the academy to become the hospitality trade’s centre of excellence — which would then become a blueprint for national expansion.
The council insists it will use local suppliers and take on 100 apprentices each year.
